May I suggest planning a good bit of protein around these lovely treats or you'll feel dumb as a doorknob a day after indulging on these. Sugar will do that to you.
On the stove top in an extra large saucepan mix:
1/4 lb. butter
1/2 cup milk
1/2 cup cocoa
1 1/2 cups sugar (or possibly less if you prefer)
Boil together for 1 minute stirring constantly.
Then remove from heat and add:
1/2 cup peanut butter
1 tsp. vanilla
3 cups uncooked quick oats
Stir well and drop by spoonfuls onto wax paper. Allow them to cool (set up) for a couple of hours before enjoying.
My allergies made me feel puny and kinda got in the way of my baking Hackathon cookies. But I'm back today and sending in Amazingly soft oatmeal raisin cookies from a fellow Voxer's recipe. I couldn't bring myself to put in the raisins. But they're full of semi-sweet chocolate chips. Also, I use salted butter by default, so I didn't use as much salt as the recipe called for and slightly less brown sugar. They turned out lovely, soft and a good combination of salty sweetness. Sending 50+ cookies in with Brad tomorrow.
My baking attempts last night failed miserably? because I didn't read the directions right and didn't multiply everything by 2 for 2 batches.
I didn't cry, but I was very disappointed since it's a favorite cookie at our house. They were still edible, (ok the failure was not that miserable) so Brad suggested we lather them in a spoon of nutella for the kids' breakfast. It worked.
Although I prefer sending something in on a Wednesday, because Wednesdays seem like a good day for that, I will try again tonight on a different cookie.
After last night though, I'm all right with failing again. It gets easier :)
The tally for Savannah's Girl Scout cookie sales has reached 207! Thanks is mostly due to Six Apart. I doff the proverbial hat. Savannah is an enthusiastic girl and pumped about the number. Our congregation ordered the other chunk, and we sold 5 boxes between 2 of our neighbors. So thank you all. We hope to have Savannah deliver all the cookies in person, so everyone at Brad's office has a chance to do business with her directly.
